Want to disable automatic iPhone backup in iTunes?

I am using 3G iphone in which I have stored many important data and music files. I used to backup my data time to time. In my iPhone backup is data is done automatically in iTunes. Sometimes it takes long time to backup data from my iphone to my system. I tried to disable the automatic backup but it does not work. I want to know how I can disable automatic iPhone backup in iTunes. Can you suggest some tips?
